The wine
Anne-Laure Sicard's Terrasses du Larzac is made from very old Grenache, Syrah and Cinsault vines grown on the highest vines in the appellation. A racy, complex wine, with pretty black fruit and supple tannins, all enhanced by the freshness of its terroir, i.e. its sandstone and schist soil, its altitude of 450 meters and its climate directly influenced by the Larzac plateau, which the vines touch with the tips of their tendrils. A wine to enjoy with red meats in sauce, duck breast, mature cheeses or even a chocolate dessert.
The estate
Anne-Laure Sicard is a new winemaker in Terrasses du Larzac. An oenologist and agricultural engineer, her quest for wine has taken her to the four corners of the globe, where she has worked in numerous estates, accumulating knowledge, forging the design of what was to become Mas Lasta. In 2016, she found her little paradise, 8 hectares of small plots interspersed with groves of white oak and stretches of broom, nestled at the foot of the springs of the Causse Aveyronnais, between the sheepfolds of Roquefort ewes, the olive groves of Lucquiers and the wolf. Anne-Laure has undertaken a monumental task, to arrive today at what I consider to be the most beautiful vines in the appellation. She grows very old Grenache, Syrah and Cinsault. The vineyards are farmed organically, and have just been awarded the Vin Méthode Nature label. An essential Terrasses du Larzac estate!

Vinification
Fermentation in stainless steel vats. Gentle pumping-over and trapping. Vatting for 2 to 3 weeks. Vin de coule only.
